Stuffed Zucchini

Another zucchini recipe! This one came together as a result of one seriously large zucchini.  It was probably almost a foot and a half long.  So, I chopped it up into four different chunks and scrapped out the insides.  Then I stuffed them with some of the same meat mixture that I put in our lasagna combined with some extra pizza sauce I had leftover after canning. (By the way, you could easily make some sauce and just freeze it if canning is a bit intimidating!)  I would have also added in the zucchini that I had cut out of the middle, but I was crunched for time and totally spaced it.

I popped them in the a 350 degree oven for about 45 minutes.  They turned out great! 

We've been having zucchini for at least two meals a day lately and I think we are starting to tire of it.  I've got a couple more recipes that I want to try out, but then I think it's safe to say that we'll be happy to take a little break from our mass consumption of zucchini.  Until we have a craving for lasagna -- which might not be very long!
